I read this fascinating interview about food and nutrition. One of the premises that stuck with me was that in modern day america we view food as medicine instead of as food. It suggests an almost religious quality to the way Americans eat. Nutritionism.

It suggests that we take longer reading the labels than eating the actual product. It states that we should not be eating things that have a long shelf life, that we should only eat foods that rot. It suggests that while we've all gotten so crazy about what nutrients and vitamins are in our processed food, we've still been eating processed food.

It's ironic that even though we believe we are eating better, we are actually becoming less healthy.
